On one hand, malnutrition continues to be one of the leading causes of disease and death worldwide; on the other, agri-food production weighs heavily on the environment through deforestation, emissions, and biodiversity loss. Leading this change are especially the new generations, increasingly aware and digital, who make their eating habits a sign of identity. In this evolution, food is seen as an ally for well-being and longevity: there's growing research into foods that improve concentration, sleep, stress management, and disease prevention.

People therefore seek healthier products, avoiding harmful ingredients and using apps that help them maintain a balanced diet. There's a spreading preference for plant-based dietary regimens that are flexible and enriched with new protein sources like algae, fermented foods, and cultivated meat. Sustainability becomes an essential requirement, with attention to transparent supply chains that are respectful of nature.

Finally, sociality is also changing: food is no longer experienced only outside the home, but becomes a domestic and personalized experience, facilitated by delivery and ghost kitchens, transforming into a field for experimentation, inclusion, and creativity.
